Kajiki, or Marlin, is mild in flavor and cooks to a firm and flaky white meat, making it a great grilling fish. Similar to Swordfish, it’s nearly as firm, but tends to have a more delicate taste.

Fish was frozen the night after caught off the coast of Kaua’i waters, at the height of freshness.
